Ingredients:
2 lbs baby potatoes, halved
1/4 cup butter, melted
1/4 cup olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 tsp dried oregano
1 tsp dried basil
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Directions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together melted butter, olive oil, minced garlic, grated Parmesan cheese, dried oregano, and dried basil.
- Add the halved baby potatoes to the bowl and toss until well coated with the garlic butter mixture.
- Season with salt and pepper to taste.
- Spread the potatoes in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside.
- Remove from the oven and garnish with fresh parsley.
