Roasted Garlic Butter Parmesan Potatoes Recipe

Ingredients:


2 lbs baby potatoes, halved
1/4 cup butter, melted
1/4 cup olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 tsp dried oregano
1 tsp dried basil
Salt and pepper, to taste
Fresh parsley, chopped, for garnish


Directions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together melted butter, olive oil, minced garlic, grated Parmesan cheese, dried oregano, and dried basil.
  3. Add the halved baby potatoes to the bowl and toss until well coated with the garlic butter mixture.
  4. Season with salt and pepper to taste.
  5. Spread the potatoes in a single layer on the prepared baking sheet.
  6. Roast for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside.
  7. Remove from the oven and garnish with fresh parsley.
