Oven-Fried Chicken Chimichangas

Ingredients:

1 lb cooked and shredded chicken
1 can black beans, drained and rinsed
1 can corn, drained
1/4 cup diced onion
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1 tsp ground cumin
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
6-8 large flour tortillas
1 cup shredded cheddar cheese
Cooking spray
Directions:
1- Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper.
2- In a large mixing bowl, combine the cooked and shredded chicken, black beans, corn, diced onion, diced red and green bell pepper, ground cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
3- Spoon the chicken mixture onto each flour tortilla and top each with shredded cheddar cheese. Fold in the sides of the tortillas and roll them up tightly to form chimichangas.
4- Place the chimichangas seam-side down on the prepared baking sheet. Spray each one with cooking spray.
5- Bake for 20-25 minutes, or until the chimichangas are golden brown and crispy.
6- Serve the Oven-Fried Chicken Chimichangas hot with your favorite dipping sauce, such as salsa or guacamole.
