Ingredients:
4 chicken thighs, bone-in and skin-on
1/4 cup soy sauce
1/4 cup mirin
1/4 cup sake
2 tbsp sugar
2 garlic cloves, minced
1 inch ginger, grated
1 green onion, thinly sliced
Directions:
1- In a mixing bowl, whisk together the soy sauce, mirin, sake, sugar, minced garlic, grated ginger, and sliced green onion until well combined.
2- Place the chicken thighs in a large resealable bag and pour the marinade over the chicken. Seal the bag and marinate in the fridge for at least 2 hours or overnight.
3- Preheat the oven to 400°F (200°C). Remove the chicken from the marinade and place the chicken on a baking sheet lined with parchment paper.
4- Bake the chicken in the oven for 35-40 minutes or until the chicken is cooked through and the skin is crispy.
5- Serve the Japanese Mum’s Chicken hot with steamed rice and your favorite veggies.
