Ingredients:
2 ripe bananas
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup brown sugar
1 teaspoon ground cinnamon
Instructions:
Preheat the oven to 350°F (180°C) and grease a loaf pan with cooking spray.
In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
Mash the bananas in a separate bowl and stir in the vanilla extract. Add the banana mixture to the mixing bowl and mix until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the mixing bowl in three parts, alternating with the sour cream, and mix until just combined.
In a small bowl, mix together the brown sugar and cinnamon to create the streusel topping.
Pour half of the batter into the prepared loaf pan, sprinkle with half of the streusel topping, then pour the remaining batter on top. Sprinkle the remaining streusel topping on top.
Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
