Ingredients:
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup unsweetened applesauce
1 cup diced apples
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Directions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Beat in eggs and vanilla extract until combined.
- Gradually stir in flour mixture, alternating with applesauce, until batter is smooth.
- In a separate bowl, toss diced apples with cinnamon and nutmeg.
- Pour half of the batter into the prepared cake pan, then layer the apple mixture on top.
- Pour the remaining batter on top of the apples.
- Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
